Executive Chef Hanchia Hsu
Born into a farming family in Yunlin, with a deep-seated reverence for ingredients, Chef Hsu brought this purity to An Tung Restaurant at the age of fifteen. Starting from the ground up, he has written an epic tale of professional growth alongside the brand.
In this culinary journey, he has worked with legendary chefs such as Jimmy Chang, Bing-chang Lin, and Noel Bernard, and broadened his horizons during An Tung Restaurant's glorious era of international gastronomy. In 2001, driven by a pursuit of the soul of French cuisine, he traveled alone to France, precisely internalizing the local culture and authentic French culinary techniques.
After traveling extensively in France, Italy, Japan, and Hong Kong, the chef has come to deeply understand that "faithfulness to the original flavor" is the true essence of cuisine. He insists on using exquisite French techniques to bring out the true character of local Taiwanese ingredients.
Now, amidst the flowing light and shadow created by Mini LEDs, Chef Hsu balances the precision of technology with decades of craftsmanship, giving classic French cuisine a new visual soul. In every bite, he presents you with a sensory feast woven from the interplay of people, land, and time.
